Fun Dessert

A few weeks ago we made fun little desserts at mutual, so I made them for Rylan's open house and they were very well received. So much so, I'm gonna share the 'recipe' with ya'll. I will mention this takes a lot more time and a bit more money than just buying some fun little goody from Trader Joe's or Cosco or whatever, but sometimes its just fun to make homemade stuff:

1. Bake a cake, let cool

2. Crumble cake in mixing bowl

3. Mix crumbled cake with a tub of pre-made frosting (may not want to put the ENTIRE tub in though. It makes it a bit more rich if you do)

4. Roll mixture into little balls and freeze for an hour or so.

5. Melt chocolate chips or topping of choice and pour onto frozen cakeballs

6. Keep refrigerated until serving

The best part about these is that you can make a whole bunch of varieties. I have tried lemon cake mixed with vanilla frosting, topped with white chocolate. At mutual we had white cake with strawberry frosting topped with white chocolate. At Rylan's party I did vanilla cake with chocolate frosting covered in white chocolate and oreo crumbles. The ones pictured above are the vanilla cake with chocolate frosting covered in melted peanut butter chips and Andes Mints. Ironically I kind of like the peanut butter ones the best. I can't wait to try German Chocolate cake with the coconut pecan frsoting!! Yum!!

Happy Baby

Below are the two links to "Happy Videos" of Kaleb. Both of them are just him lying in his crib, hanging out. I had set up a mobile with lights and music, so I captured his reaction to it (he likey). He even started dancing. The other is his reaction to me (he likey more) ;-) Please forgive the baby talk. Kaleb smiles more when we talk like that, so whattya gonna do?

Unce Rylan

Ammon's brother Rylan left Tuesday morning for Utah, reporting to the Arakipa Peru Mission (not sure of the spelling). He had an open house Monday night and was set apart right after, so of course we got a bunch of pictures with the family.

Ammon has a job... AGAIN!!

I never really announced on the blog that the job Ammon got back in March went bust after six weeks. They never actually fired him, but told him, "We'll call you when we get more work." That was at the end of April. Well, on Tuesday Ammon started at a company (I forget the name, its something really generic like "The Railroad Company") that builds trains. Not big freight trains, but smaller trains like the ones you might see at Freestone park or Schnepf Farms... or a really rich person's house. Ammon really enjoys it and is looking forward to learning (and earning) a lot. We appreciate all of your support and prayers, especially both of our dads who heard about this opportunity at the same time.
